  • 1 lb. Lion's Mane mushrooms, sliced

  • 1 red onion, diced

  • 1 red bell pepper, sliced

  • 1 avocado, diced

  • 1/4 cup cilantro, chopped

  • 2 limes, cut into wedges

  • 8 tortillas

  • 2 tbsp. olive oil

  • 1 tsp. cumin

  • 1 tsp. chili powder

  • Salt and pepper, to taste



  • Clean and chop 1 pound of Lion's Mane mushrooms and set aside.


  1. In a large pot, sauté 1 diced onion and 3 minced garlic cloves in 2 tablespoons of olive oil until softened over medium-high heat.

  2. Add the sliced Lion's Mane mushrooms and cook for 3-5 minutes until they begin to brown.

  3. Add the diced onion and sliced red bell pepper, and cook for an additional 2-3 minutes until the vegetables are softened.

  4. Season with cumin, chili powder, salt, and pepper, and stir to coat the vegetables evenly.

  5. Remove from heat and set aside.

  6. Warm the tortillas in a skillet over medium-high heat until they begin to brown and crisp up.

  7. Fill each tortilla with the cooked Lion's Mane mushroom mixture, diced avocado, and chopped cilantro.

  8. Squeeze a lime wedge over each taco before serving.
