1 large Lion's Mane Mushroom
1 small onion, chopped
2 cloves garlic, minced
2 cups vegetable broth
1 cup unsweetened almond milk
1 tbsp olive oil
Salt and pepper to taste
Optional: Fresh herbs for garnish
Clean and chop 1 pound of Lion's Mane mushrooms and set aside.
In a large pot, sauté 1 diced onion and 3 minced garlic cloves in 2 tablespoons of olive oil until softened.
In a large pot, heat the olive oil over medium-high heat. Add the onion and garlic and sauté for 2-3 minutes, or until the onion is translucent.
Add the Lion's Mane Mushroom to the pot and sauté for an additional 5-7 minutes, or until the mushroom is browned and cooked through.
Pour in the vegetable broth and bring the soup to a boil. Reduce the heat to low and let it simmer for 10-15 minutes.
Using an immersion blender or a regular blender, puree the soup until it is smooth.
Add the almond milk to the pot and stir until it is well combined.
Taste the soup and add salt and pepper as needed.
