Lion's Mane Mushroom Soup


  • 1 lb lion's mane mushrooms

  • 1 onion, chopped

  • 4 cloves garlic, minced

  • 2 carrots, peeled and chopped

  • 2 celery stalks, chopped

  • 1 tsp dried thyme

  • 2 bay leaves

  • 4 cups vegetable broth

  • 2 tbsp olive oil

  • Salt and pepper, to taste

Preparation for Lion's Mane Mushroom Soup (~5 Minutes)

  1. Clean the Lion's mane mushrooms and cut them into small pieces.

  2. Chop the onion and garlic finely.

Instructions for Lion’s Mane Mushroom Soup (~25 Minutes)

  1. In a large pot, melt the butter over medium heat.

  2. Add the chopped mushrooms, garlic, and thyme to the pot and cook for 5 minutes.

  3. Pour in the vegetable broth and bring to a boil.

  4. Reduce the heat to low and let the soup simmer for 15 minutes.

  5. Stir in the heavy cream and cook for an additional 5 minutes.

  6. Remove the pot from heat and use an immersion blender to blend the soup until it is smooth.

  7. Season with salt and pepper to taste.

  8. Ladle the soup into bowls and garnish with fresh thyme leaves before serving.
